Chickpea Salad Sandwiches
Now that things are opening up again, it is time for me to go back to working in person. There are a lot of things about going back to work that will take some getting used to - like getting out of my pajamas every day - but a big thing I forgot about was having to pack a lunch every night. I like to make packing a lunch as easy as humanly possible, and one of my favourite things to make are chickpea salad sandwiches.
Chickpea salad sandwiches are a great cruelty-free alternative to egg salad sandwiches. They are easy to make, affordable, healthy, and they taste really good! This recipe is one of the few things I don’t get sick of eating all week.
The main ingredients are of course chickpeas, along with vegan mayonnaise, yellow mustard, green onions, and salt and pepper. For extra flavour I like to add dill pickles, dried dill, grated carrot, and a bit of paprika. The grated carrot was inspired by an egg salad sandwich I had many years ago at a high tea. I loved the texture the carrot added to the sandwich, so ever since I started making chickpea salad sandwiches, I have added grated carrot to them.
As I said before, the recipe is very easy to make. Start by adding two 398 ml cans of chickpeas (rinsed) into a large mixing bowl.
Mash the chickpeas with a potato masher, and add the rest of the ingredients into the bowl.
Mix it all together.
Take two slices of bread, buttering both sides with vegan butter (or vegan mayo), add a couple heaping spoonfuls of the chickpea salad onto the bread to make a sandwich, and that's it!
Chickpea Salad Sandwiches
Makes 4-6 servings
Prep time: approx. 15 minutes
Ingredients
2 cans chickpeas (398 ml each) drained and rinsed, mashed with a potato masher
1 medium-sized carrot, grated
2 green onions, chopped
2 pickles, chopped
1/2 cup vegan mayonnaise
2 tsp yellow mustard
1/2 tsp paprika
1 tsp dried dill
Salt and pepper to taste
The Process
Drain the two cans of chickpeas and rinse well. Add the chickpeas to a large mixing bowl and mash the chickpeas with a potato masher.
Add the carrot, green onions, pickles, vegan mayonnaise, mustard, paprika, and dill to the mixture, and stir well. Add salt and pepper as you need it.
Butter two slices of bread using vegan butter or mayo. Add a couple heaping spoonfuls of the mixture onto the bread, making a sandwich.
